Cabbage Rolls

A great dinner for the whole family. You can even trick the kids into eating more veggies with this sneaky recipe



 

- 1 pound exta lean ground beef
- 2 celery sticks diced
- half large onion diced
- drizzle of olive oil
- paprika 
- cayenne pepper 
- salt
- 2 cans tomato sauce (Make sure it is sugar free.  Heinz regular tomato sauce is the only sugar free sauce I have found in the regular section.  If you go organic they are usually sugar free.  Just read the labels.)
- 4 cloves garlic, minced
- one can black beans, rinsed
- one head cauliflower
- one head cabbage
 
 
Combine beef, celery, onion, paprika, pepper and salt.  Drizzle pan with olive oil, add meat mixture and brown.
Drain meat fully. Add 1/2 cup of tomato sauce, and minced garlic.  Add one can rinsed black beans. Let simmer on low.
 
In the meantime you can prep your cauliflower and cabbage.
Using a food processor, chop the entire head of cauliflower into tiny, rice sized peieces. Boil cauliflower until slghtly tender.  You do not want it to be overcooked.  Add cauliflower to beef mixture.  Set aside.
 
Boil cabbage, remove spines.  Cabbage should be soft enough to work with but not too mushy either. Using one leaf for each make cabbage rolls with beef mixture.
 
Pour remaining tomato sauce (just over one can) over rolls in a casserole dish.
 
Bake for 2 hours at 350 covered with tin foil. 
 
Serve with one tablespoon fat free greek yogurt.
